Ingredients:
4 ½ oz. protein, 1 veggie, and 1 carb per serving
½ cup cooked black beans
¾ cup cooked brown or whole grain rice
1 tortilla (0-1 gram fat & not over 95 cal/serving)
1 ½ cups total shredded lettuce* and tomato
¼ cup salsa
1 tbsp fat free sour cream
Instructions:
Roll up hot rice and beans in tortilla
Top it with salsa and a dollop of free sour cream
Serve on a bed of lettuce and tomato.
* Tip: Look for pre-shredded lettuce in produce department.
