1 DAIRY AND 1 CARB
Ingredients:
- 1 small organic red potato 
- ½ cup (4 oz) fat free cottage cheese 
- chives, chopped (dried or fresh) 
- black pepper (to taste) 
Instructions:
- Pierce potato with a fork and cook in microwave on high until tender (about 5 minutes) 
- Split potato in half and mash with a fork 
- Pile the cottage cheese on top 
- Sprinkle with chives and black pepper to taste
